So far, so good.

Going slow with the food, though. Instead of jumping into tofurkey and bean-spout burgers, I've been tweaking our regular recipes just a bit - to make them a little less "filling". By which I mean filling out my clothes. I absolutely love rice (or pasta) with a creamy mushroom sauce. Sometimes made from scratch with real whipping cream and butter. And, sometimes with Campbell's cream of mushroom soup. Apparently, that might not be the healthiest meal.

Tweaked out: garlic chicken, steamed rice, fresh roma tomatoes, rosemary carrots, and the new and improved mushroom sauce. I sauteed fresh mushrooms, green bell peppers, green onions in a little bit of olive oil, chopped garlic, and lemon pepper. One minute before the end, I added a small amount of half-half.

Response: Hannah told me it was the best chicken I ever made. (I heated up a little olive oil, seasoned my bone/skin-less chicken breasts, cooked on both sides for color, poured in some water, sealed it with a lid, and let it cook for a few minutes. Nice and moist). Adam ate all his veggies, and actually tried a couple bites of chicken (which is huge). TJ told me we should add it into the rotation - this just might be his highest praise. So, all in all, I was feeling pretty good all night. All proud of myself - delicious food, and a tweaked recipe. Of course, any day that I serve my family food and no one makes gagging sounds is a triumphant one in my book.
